Southwest Chili Pasta

*This is meant as a “meatless” meal.  Sometimes I brown a pound of ground beef or turkey and add to the peppers, beans, etc.  I also usually add a chopped onion when I sauté the pepper.

1 green bell pepper
8 ounces pasta
1 tablespoon olive oil
2 teaspoons garlic
1 ˝ teaspoons ground cumin
1 can black beans
1 can kidney beans
1 can stewed tomatoes
2 teaspoons chili powder 

Put on large pot of water to boil.  Seed and chop pepper and set aside.  Open cans called for.  Drain beans.  As soon as water boils, stir in pasta and set timer for 10 minutes.  Heat oil in large nonstick saucepan over medium-high heat, then sauté garlic and chopped pepper for 1 minute.  Add cumin and sauté 10 seconds longer.  Add beans, tomatoes and chili powder to pan and simmer 10 minutes more.  When pasta is done, drain mix with chili.
