Easy Recipes for Strawberries....thanks Marie Beavers for the recipes!

Basic Strawberry Quick Sauce
 
We use this sauce on shortcake, poundcake, and even pancakes.  Yummy!
 
4 cups sliced fresh strawberries
1/2 cup sugar
 
Mix together, set aside for a few minutes to let the strawberries get juicy.

 
Easy Strawberry Shortcake
 
I love this recipe not only because it's easy, but because I can modify it for my son who is allergic to dairy (eggs and milk).
 
Basic Strawberry Quick Sauce (above)
 
2 1/3 cups Bisquick
1/2 cup milk (soy milk works well too)
3 tablespoons sugar
3 tablespoons butter or margarine (non dairy "butter" works well too)
Container frozen whipped topping, thawed (I use a dairy-free whipped topping for my allergic son)
 
Heat oven to 425 degrees.  Stir Bisquick, sugar, butter together until soft dough forms.  Using an ice cream scoop (the kind with a spring), scoop onto an ungreased cookie sheet.  Bake 10-12 minutes until golden brown.  Split warm shortcakes.  Spoon whipped topping on bottom half, top with strawberry sauce, place top half on top, then spoon more whipped topping on top half and top with strawberry sauce.  Makes 6 shortcakes.

 
Strawberry Smoothie
 
It has become our tradition to make this as soon as we get back from strawberry picking!
 
1 1/2 cups milk (soy milk works well too)
1 cup strawberries
2 tablespoons sugar
1 teaspoon lemon juice
1 cup crushed ice
 
Blend all ingredients, process until smooth.

 
Toblerone Fondue for Strawberries
 
This is the best chocolate fondue recipe!
 
3/4 cup heavy cream
4 (3 1/2 ounce) bars Toblerone, finely chopped (the chocolate/hazelnut bar shaped like a triangular prism)
1 tablespoon cognac or hazelnut flavored coffee syrup
 
Place a metal or glass bowl that sets on (but not into) a saucepan partially filled with water.  Bring the cream to a simmer over medium heat.  Add the Toblerone bars, stir until melted.  Add the cognac or coffee syrup and whisk until smooth.
 
Transfer to a fondue pot (dig out that dusty wedding gift!) to keep warm.  Serve with strawberries, cut up pound cake (see below), marshmallows, cut up rice krispie treats, bananas, etc.

 
Strawberry Fruit Leather
 
Yes, it takes a long time to bake, but it tastes great!
 
2 cups fresh strawberry puree
1 tablespoon lemon juice
1 cup applesauce
1/2 cup sugar
 
Combine above.  Line a jelly roll pan with plastic wrap.  Pour fruit into pan and spread evenly.  Bake for 5 hours at 200 degrees or until leather pulls away from wrap.  Flip leather onto counter, peel away plastic, and remove any mixture that has not set.  Cut into slices and wrap each in plastic.
