Crockpot Fajitas
*The recipe for this calls for 10 jalapeno pepper rings (from a jar) to be added to the slow cooker.  I omit those.  Also you can use 1 pound of beef flank steak instead of the chicken if you wish.  If your family likes a lot of meat, increase the amount to your liking.

1 pound boneless chicken breasts
1 large onion
3 sweet peppers (green, yellow or red)
1 teaspoon chopped garlic
1 teaspoon ground cumin
1 can black beans, drained
1 packet fajita season mix
12 8” flour tortillas
3 ripe tomatoes
1 cup shredded lettuce
12 tablespoons light sour cream 

Place meat in slow cooker.  Cut veges in strips and put into slow cooker.  Add spices and beans to slow cooker and mix well.  Cook on HIGH 4 to 5 hours or on LOW 7 to 8 hours.  Before serving, shred meat.  Warm tortillas in microwave.  Use a slotted spoon to remove contents from slow cooker.  Assemble fajitas with toppings of your choice.
