Bean Soup
*Do not add salt to beans before cooking.  If you do, they will not soften up.  Add the seasoning later.

1 pound dried soup beans
1 quart water
salt and pepper
1 large onion
1 cup chopped celery
1 cup chopped carrot
Optional – ham bone 

Soak beans overnight in water.  In the morning, drain beans.  Put beans in crock pot with water, onion, celery and carrot.  Cook on high 7 hours.  Add salt and pepper.  If desired add ham bone and cook additional 2 hours.
